Navigating the Comfort Crisis: A Journey to an Unprocessed Life

Speaker Contributions

Dr. Brent Laartz: Served as the primary speaker, detailing his personal journey through "Week 16" of an unprocessed life. He contributed insights on the psychological and physical impacts of modern comfort, the importance of intentional living, and the rejection of instant gratification in favor of long-term health.

Key Points and Decisions

The Comfort Crisis: The host argued that modern society’s reliance on convenience—such as ultra-processed foods, instant entertainment, and sedentary commuting—is detrimental to longevity. He decided to actively eschew these comforts in favor of "doing the hard work" himself.

Dietary Strategy: The host committed to a diet focused on whole foods, specifically incorporating daily herbal teas (peppermint), chia seeds for omega-3s, and a 4-strain probiotic yogurt regimen (including Lactobacillus salivarius, Akkermansia, and Veillonella) to support metabolic health and stamina.

Environmental and Lifestyle Choices: A firm decision was made to eliminate microwave usage and reduce plastic exposure in food preparation. The host emphasized the importance of real-world social connections, such as hosting gatherings and making phone calls, over digital communication.

Movement Philosophy: The host decided to shift his exercise routine toward competitive races (starting with a 5K) and team sports, moving away from the excessive stress of ultra-endurance training while maintaining a balance of resistance and cardiovascular training.

Next Steps and Action Items

*Social**: Host a sourdough pizza party to foster community and connection.*   Movement: Begin training for a 5K competitive race to be completed within the next month.*   Research: Prepare and present the "Sunday Science" segment regarding the association between neonatal/adult plastic exposure and gut inflammation.*   Routine: Continue daily habits, including the consumption of herbal tea, chia seeds, and specific probiotic strains.*   Environment: Adjust the use of essential oil diffusers (specifically lavender) to ensure they do not negatively impact the sleep environment or pets.

Welcome to the Go Unpro Podcast, a doctor's fifty-two week journey to an unprocessed life. Now, here is your host Dr. Brent W. Lartz, associate professor of infectious diseases and internal medicine, neuroscientist, and best-selling author.

Dr. Brent Laartz

All right everyone.

Dr. Brent Laartz

Welcome to... Alright everyone, welcome to a doctor's 52-week journey to an uncrossless life. This is week 16. We're again almost a third of the way through the year. We're going to be talking about comfort today, okay? As I lean back in my nice little chair, my nice house, um and um as you can see again, we are remodeling and fixing up the Go Unpro podcast studio here. And we're going to be having a Sunday science tomorrow.

Dr. Brent Laartz

And today we're talking about week 16 and what we're doing about it. What we're doing about my life getting to an unprocessed life. Really, the first three or four weeks was pretty simple. Getting rid of non-stick pans, getting to stainless steel, getting to glass, getting to wooden utensils, et cetera.

Dr. Brent Laartz

Every step after probably about two or three months, it gets into the finer points of life, okay? And here is the rub, and that is everything a little bit about what I'm doing is about the comfort of life, okay? And not necessarily taking the easy way out every time. And that's where I want to be every day of my life. Every time I think about going on that five-mile run or going to try to get some resistance training or trying to

Dr. Brent Laartz

get rid of some of the comfort foods and get some of the necessary foods for my longevity. And I will get to the comfort foods, believe you me. Okay? So, um, and so I saw this guy who has this book called The Comfort Crisis. And not all of it I believe in. I don't believe that I should be going up to Alaska and getting out into the woods and spending five weeks, four weeks out in the, uh, you know, brush, uh border of of Alaska to get out there and really roughing it.

Dr. Brent Laartz

What I'm talking about is roughing it compared to what the average or the standard American life is, that standard American diet. sad right?

Dr. Brent Laartz

the standard American life is fast food. It's getting everything. It is it is the getting everything you want now. It's the gratification now. There's no delayed gratification. This is where the American society fails its citizens uh really poorly, okay? So, um let's talk about that comfort. Let's get uh so I've um listened to the Comfort Book on Audible and I love the way it describes everything about American life. And here's my thoughts on it.

Dr. Brent Laartz

every facet of our life, and we can break it down by the five pillars of my thoughts of what is a better unprocessed life. We can think about the diet. When I was just talking about about fast food and foods and getting something that is, you know, pre-processed, ultra-processed, already made into something that's a bite-sized diet for you and you can just dip it into the dip that's already pre-made and you can make that, um, and you don't have to make it, I should say.

Dr. Brent Laartz

and then talk about uh drinks that you can just crack open a drink and drink it and and not have to worry about what you're actually drinking. And really what we really need is just plain water. But we want it to taste like something, right? We want it to taste like it is heaven on earth. We want it to taste delectable, right? We we want it to be uh like we are getting the last taste in our rest of our life. We're about to be put to death and we need to get that most ultimate taste.

Dr. Brent Laartz

Same thing with, um, you know, and this is a sidetrack here because it's not part of this, but same thing with our consumption of entertainment

Dr. Brent Laartz

Every year for the last twenty to forty years, our and maybe even back going further from that, our entertainment has gone one step above to the more risqué and it has to be something unusual. And you've got people, uh, going out of their way to go to try to do something that is not healthy for them, that's for sure, and they, uh, experience sexual gratification in some sort of an unusual way in a not personal way.

Dr. Brent Laartz

there's porn you can watch at home and not even have to um see a person. And there can be multiple different odd unusual things done in those videos that are not natural and are not personal and are not normal to be done, okay? So, all right, so off that soapbox, that's a

Dr. Brent Laartz

completely different story that would be that would be going into something uh completely different psychology of what we need to do as a society, but it it lends itself right toward this situation of the comfort of the gratification of the instant gratification of our society. Um we're talking about protein and supplements and all these people wanting to get a bar that gives them 40 grams of protein and 100 grams of protein, their entire day's worth of protein in one bar.

Dr. Brent Laartz

What the hell makes one think that that is a good idea to put some kind of milk protein, pea protein, all into one bar that is a, let's say it's a 200 gram bar and you put 100 grams of protein in it? Who the hell ever thought that was such a good idea to make some ultra-processed bullshit and put it into a bar, right?

Dr. Brent Laartz

So, and all these supplements that people want to take that are going to supplement, um every, you know, supplement antioxidants and beets and and they're going to take uh beets in a pill and what the heck is going on with us that we have to do that? It is not normal.

Dr. Brent Laartz

is not real And that's where we're at today. And the rest of life. some movement, for example movement

Dr. Brent Laartz

Um, we're commuting, we're going two miles down the road by car and granted it's hot out and I just ran five miles today, ran exactly where I could have gone to go to the grocery store, could have maybe gotten a backpack and and brought food home for my party today. And speaking of which, yard work, um that I had to do yesterday and today and weeding and getting getting out there into your lawn. So much so nowadays we have um somebody coming to your house, you pay them two hundred dollars a month.

Dr. Brent Laartz

They have somebody making minimum wage that's come rushing through and taking care of your yard.

Dr. Brent Laartz

And it's doesn't make sense. Why can't you do it yourself?

Dr. Brent Laartz

And some of that work you might not have time for and uh I don't have time for. And so some of it it's reasonable, but you should be getting out there. You should be doing some gardening and so and that's that comes to fixing your own food and cooking and eating and gardening and shopping and u-pick. I love the u-pick places. Haven't been to one but this is something I'm going to be doing this week is trying to get to a u-pick place. Summertime in Florida, springtime's really good for u-pick strawberries. Uh summertime can be some u-pick different things and then fall has some blackberries etcetera.

Dr. Brent Laartz

Um, I'm going to be doing some U picking, um, sometime soon. Um, and then leisure, we talked about the obvious video, really extreme example of that, but but leisure. People really just want to go somewhere and drink and drink at home and drink this and and not really get a connection. And even when they go to a bar, some people are sitting at the bar and they're eating by themselves and don't even talk to anybody. They talk to the bartender and that's it. Well, the dark bartender has to talk to you, right? At least they're talking to somebody. Um, or online.

Dr. Brent Laartz

that connection online and texting and not calling people. I had a friend of mine from medical school. I've been, as you know, I've been getting in touch with some medical school friends, college friends, high school friends, trying to stay in touch at least by texting. But I was texting about, you know, this uh pediatrician up in Boston about getting together.

Dr. Brent Laartz

and got a phone call from him.

Dr. Brent Laartz

I was like, yeah, that's perfect. Talked to him for a good 30 minutes about uh different people we knew that uh finding out where they're at, try to get some people together and and do a trip. And this is something that people in their 40s, 50s do nowadays. They get together with their friends whose kids are already grown and a lot of my high school friends and college friends uh already kind of they're a little step ahead of me on that. And um so and no visiting and you know, we just text to people and we don't see people that we had talked about.

Dr. Brent Laartz

and that that's something, you know, you might text somebody but you don't go to their house. We don't often go to somebody's house. Hence, having a party this weekend. And and that party starts in about 36 minutes. So hence this is uh going to be a little bit of a shortened episode.

Dr. Brent Laartz

and um other things So let me get back to this. plastics everything prepared for us

Dr. Brent Laartz

using the microwave, using simple ways to cook, prepared foods and pre-preprocessed foods, and something that can be just thrown in the microwave. You just peel the peel off the the plastic film off, put it in the microwave, and then you cook it. And lo and behold, there's plastics, even though there's supposed to be microwavable microwave safe is what they call it. Microwave safe is a lot different from not going to put microshock, um, uh, not microshock, microplastics into your, into your food, right? So there's a whole big difference in that.

Dr. Brent Laartz

And here's what this whole process has taught me. And I I've been doing this for a while, even before this 16 weeks. Each week here, I've been doing this for a few years, trying to really get back to nature, get back to doing things myself. Um went to a condo only because we had some hurricanes here in in Florida. So for a couple of years, I was into a condo and really uh...

Dr. Brent Laartz

design condo this was, no light, didn't have any ability to do any gardening and etcetera, but did get me outside a lot. That was a great part about it. And it was in a space where I could get out to the riverwalk of Tampa and so that was great. But here's where I'm at. I'm eschewing these comforts, doing the hard work, doing the necessary, getting the necessary things done that are not a comfort, okay? And uh I thought of a little quote, doing the dirty deeds, but don't doing don't don't do them cheaper.

Dr. Brent Laartz

Let's do the do the dirty deeds but don't do them cheap, okay? So, um, all right.

Dr. Brent Laartz

So, let's get to week 16. We're what we're doing this week is uh daily tea herbal uh tea. I don't drink caffeine, so I do herbal teas, uh especially my favorite is peppermint. So right now on the stove is the peppermint tea. So we'll uh set up over there. Let me show you that in a second and you'll see my kitchen is a mess. It is destroyed right now because we are cooking pizzas. We're having a pizza party, okay? Uh we'll talk about that in a little bit. So we'll see you in a second, okay?

Dr. Brent Laartz

Alright, here we are in the kitchen and uh you can see, not sure if you can see around here, but there are peppers, tomatoes, there is sourdough, there is everything you could imagine. Here is my peppermint tea, my stovetop. I don't have the steel kettle yet, but I do have my steel uh things. Here's some pepperoni that other people have been eating. Let's get that out of here because I'm not going to be having pepperoni. Um but I am, look at this, this is my girlfriend made some uh basil and oregano oil uh with infusion into the olive oil that we have here.

Dr. Brent Laartz

so, um again, so that is hot.

Dr. Brent Laartz

Okay, so that's gonna steep here for a little while. I'm gonna pour that into a cup and we're gonna rejoin the podcast, uh, and we'll see you on the other side. Love it. love peppermint tea love everything we're doing here.

Dr. Brent Laartz

We'll see you in a minute.

Dr. Brent Laartz

Alright, so Here we are, back. We've got our peppermint tea. and  Love it. Okay, this is very full and it's very hot.

Dr. Brent Laartz

And I've got my M&M cup, the sexy green one. We're not supposed to say that anymore, are we?

Dr. Brent Laartz

Mmm. That's hot. We'll wait for that to cool down. All right, so, um, we are also this week, um, that was our little field trip again. We do a few field trips to the gym and to the di- to the kitchen for a diet and we do some other uh...

Dr. Brent Laartz

Maybe we'll even go to the bedroom for sleep, right? Maybe we'll show what we need to do and and get that uh uh that's a little personal, isn't it? I don't know if I want to show anybody my bedroom. Um on my podcast everybody will be in my bedroom and everything.

Dr. Brent Laartz

I don't think so. Um, but we might go to uh get-together or something like that. Um, connection for connection, right? Um, alright.

Dr. Brent Laartz

So, the other things I'm doing this week is, uh, I'm doing multiple things. Doing this daily tea with the peppermint tea. Uh, peppermint herbal teas are really good. You might try chamomile tea for for nighttime, for sleep. You might try a bunch of different, uh, permutations on some different herbs. Peppermint has been shown to increase, uh, concentration and some other types of, and it actually, there's some data for Alzheimer's disease and delaying dementia. There is, uh, lavender for sleep.

Dr. Brent Laartz

Um, I don't think I would do a lavender tea. I don't really like the taste of it.

Dr. Brent Laartz

don't mind the smell. Uh but we did recently do essential oils on this uh podcast for sleep. We're doing lavender essential oils. In my bedroom I have a diffuser and this is a natural reed diffuser. I don't believe in the um diffusion through heating of the oil and in a in plastic containers. I want to have this be all glass and uh with a natural reed diffuser. Um I can't remember what the wood is uh that is made up. I think it's rattan. And that in there.

Dr. Brent Laartz

I've got a peppermint diffuser up here. I don't think you can see it up here, but on this shelf up here, I have a peppermint diffuser. I love peppermint. Peppermint is one of my favorite herbs. And so, uh, the next thing we're going to be doing uh this week is daily chia seeds to get my omega three oils. I already do an omega supplement, but you can get um with two tablespoons of chia seeds and I already do these chia seeds in my yogurt. So, it has omega three, it has quercetin, uh fruit yogurt, oats, and that

Dr. Brent Laartz

yogurt, oat, fruit, and chia seeds along with uh cacao nibs gives me all the omega-3 oils, all of the different compounds, quercetin, etcetera, that's going to get me through to the tenth century, right? So you want to be not just here for the ninth century, ninety-nine to one hundred, you want to be here for the tenth century, right?

Dr. Brent Laartz

so, um

Dr. Brent Laartz

All right, so, all right, so actually that is the 11th century, is it right? For the first first century is uh from zero to ten, right? So yeah, first uh so it would be the 10th century, 11th century is where I want to get to.

Dr. Brent Laartz

and I'm really I'm saying centuries. This is decades. Hopefully I'm not alive for eleventh centuries. Holy crap! Okay, so misspoke there. Okay.

Dr. Brent Laartz

All right. We're not going to edit that out. I don't edit out in general anything out of this except for, you know, the space in between when we're going to a uh field trip, etcetera. Otherwise, I don't edit anything out. I edit the very beginning, the very end, maybe take out where I'm at the field trip and come back in.

Dr. Brent Laartz

So

Dr. Brent Laartz

we have also an increase in my yogurt that we're doing a four-strain yogurt. We're doing Lactobacillus salivarius and some other type of Lactobacillus, either rhamnosus or could be acidophilus. We're doing Akkermansia and we're going to do Vellonella. Um, I am interested in increasing my stamina for

Dr. Brent Laartz

my longevity for being able to run on a treadmill and that has been shown with some of these lactate-utilizing bacteria such as Veillonella, Lactobacillus salivarius. There is also Bifidobacterium longum and a couple of others, okay? So, um Akkermansia is good and uh Lactobacillus rhamnosus are good uh for overall metabolic health.

Dr. Brent Laartz

and uh stove preparation of our of all of our food. We avoid microwaves and I think we had already accomplished that already. Stainless steel teapot. All right, for movement this week, um we're going to start and planning to get into team sports and competitive races, which is these competitive races I've never been one to do a, let's say, a 5K that's an organized 5K that's a race that you have to pay, that you have to try to figure out what place you got in.

Dr. Brent Laartz

uh, and I think this is the natural progression that I need to send this to is to go to these competitive races.

Dr. Brent Laartz

Um, and the team sports potentially. And I've done team sports in the past and there's club sports you can get involved with. I think this is something that is beneficial and I'm going to be doing this more. Uh, I just haven't decided exactly which type of team sports. You can do kickball.

Dr. Brent Laartz

you can do softball, you can do uh flag football, you can do volley volleyball.

Dr. Brent Laartz

and a lot of different types of sports, but competitive race is what I'm going to start out with first. And I'll do a 5K in the next month and I'm going to get uh prepared for that. And I think what that does is it it really helps you to train. I I do not and I don't think that ultra sports is where it's at, okay? I don't think that getting to an excessive amount of stress on your body to train for either 10K or an Iron Man or stuff like that, I don't think that it's necessary to do that for longevity.

Dr. Brent Laartz

I think what is necessary to do is just do the 5K, do the best you can with that, maybe up to a 10K, um occasionally, but I don't want to do that often. Okay, so and these races, even the races themselves, I only want to do a few races a week, a few races a year. So, that's where we're at, okay? So, um and we are combining daily uh movement uh resistance training and the VO2 max or the cardiovascular training into each day. Say potentially soon, I'm going to be getting to seven days a week of

Dr. Brent Laartz

cardiovascular training and three to four days a week of of uh resistance training and that seventh day that I do the cardiovascular only, let's say it might be a Sunday or Monday, that seventh day, the cardiovascular training is going to be a light recovery day. And I want my recovery days to stop being in the past my recovery day has been this.

Dr. Brent Laartz

You're laying down and you're doing maybe five to seven thousand steps. I want it to be where I do maybe a one and a half to two mile light jog or a walk or, you know, something that's a two mile walk and get that in and and so that's where we're headed with the movement this week on week sixteen. With sleep, we're continuing with the recent use of essential oils and use of lavender.

Dr. Brent Laartz

I think that uh I might have overdid it with the lavender, had three reeds in, and I've got this uh it is really intense and around my bed and as a matter of fact, I think my dog last night got a little um got a little affected by it. So uh he and he lies in a bed right next to me uh on the floor and I think it got to him a little last night. He got up and he wandered around the room and and probably affected my sleep there, right? So this dog was around wandering around.

Dr. Brent Laartz

and I had to let him out the door to go out in the backyard, peed a couple of times, came back in and and uh and I put the I put the uh lavender oil away. Um my sleep score last night I don't think was uh that great. It was uh like seventy. And uh on my Oura ring.

Dr. Brent Laartz

uh partially because of that, partially because my girlfriend had to wake up at 4:30 this morning to go to work.

Dr. Brent Laartz

Uh, all right, so then we're talking about connection, the fourth pillar. Uh, we're doing local charities, organizations, church groups, and having a healthy party. That's my idea this week to do. Um, I think yeah, the amazing thing about this party, my girlfriend is a great sourdough cook, sourdough baker, I guess I should say. And she is making, she's made 24 crusts, 24 uh sourdough balls, making that, and uh getting some all whole food um toppings for these pizzas and having a get-together.

Dr. Brent Laartz

You also, I met with some people today, joined a group of uh that does bicycling every Saturday morning and have uh potentially having a bicycle get together. I think that's another way to have a healthy party. Get a bicycle get together and go out on a trail somewhere, do something outdoors. Get a get a group of people and get out and have a picnic but also go hiking. Don't just have the picnic. Get out and do some hiking with it. I think that's a healthy thing. Have a sushi making party. Any kind of healthy food that you can talk about, okay? Don't get to, you know, I used to have parties and my parties were, you know, rum parties.

Dr. Brent Laartz

they were um bring and make the best wings right or something like that. and I love wings and it's a great reason for a get-together, but try to be make it be a healthier thing than that. Right?

Dr. Brent Laartz

and then the plastics that we're getting rid of this week, we're making our tea in stainless steel. You saw the stainless steel pot that I use it in, but I'm getting either an enamel with stainless steel inside, a little teapot that my girlfriend wants to get from her place of employment. She has something we can buy from there, but also they make so many stainless steel teapots. Trying to use fresh herbal instead of a tea bag with a stainless steel infuser into there. I think that's the way to go.

Dr. Brent Laartz

rather than, you know, here you can see, um let's see if uh can we pull this up and out here. Um, you know, if you're trying to get rid of plastics and you've got a, let's pull this over this way a little bit and you've got this, um, I'm sure that there's and and I know that for sure some are plastic. I don't know about this one in particular, but this uh could be plastic there. So, um trying to get rid of plastic, we need to think about that in the in the near future, okay? So, and then avoiding the microwave. Avoid microwaving your water.

Dr. Brent Laartz

avoid microwaving the tea and uh using just the stovetop, okay? So, that's our week sixteen this week. I love uh getting together with you every week. I love getting to unprocessed. I love where we're headed.

Dr. Brent Laartz

I love where I'm heading. Um, let's get there.

Dr. Brent Laartz

And uh we're going to have a Sunday Science uh tomorrow. And this Sunday Science article is going to be an interesting article. It is about plastic exposure in neonatal time period and gut inflammation. And there is an association there.

Dr. Brent Laartz

Alright.

Dr. Brent Laartz

Right, so we're going to find out and make the caveats to that. Is there, and then we're going to also present an article or two about that plastic exposure in adults for inflammation and gut inflammation, and show that there is definitely an association, whether it's actually the full story or not, because I'm sure if you have plastic exposure as a neonate, what else are you likely going to have? You're going to have other maybe unhealthy things around if you have that association.

Dr. Brent Laartz

And so there are some different factors that they were able to tease out of that and and control for, but you can't completely control for the healthiness of life, okay? So, all right.

Dr. Brent Laartz

So we're going to have a Sunday Science tomorrow and uh look forward to getting together with you then and talking to you about that. Oh, a little I forgot I was going to tell a little story about uh this rogue t-shirt. I'm being pretty informal today because I'm having a party. Um, my um funny story about this, my daughter when we were in Nice, France was so upset that I was wearing this t-shirt because

Dr. Brent Laartz

She didn't like how I had an American flag. She didn't want to be associated as an American in France. Well, um, I was just wearing because it was a black t-shirt. I didn't think about uh having an American flag on my t-shirt. I'm not one to be waving the flag too much. I'm not one to be too uh overly uh patriotic about those things. I am patriotic, but I'm not overly patriotic. So,

Dr. Brent Laartz

Anyway, so she did not like that and so she gets a little upset when I act too American and I am, uh, as, as enlightened as they come learning other languages. I learned, uh, some French and I've, uh, know Spanish pretty well. And so, but she didn't like that and I think my daughter can sometimes get a little bit oversensitive about that. And right, Emily, would you say so? Emily, if you're listening out there, she doesn't listen to my podcast. She might, uh, listen to the first two minutes, but this is way more than 30 minutes into this podcast, so there's no way she's seeing this, uh, unless somebody else tips her off to it.

Dr. Brent Laartz

But, Emily, you're a little overly sensitive about these things. Uh, regardless, it is my American flag. It is my Rogue T-shirt. it's informal

Dr. Brent Laartz

we're having a party, we're being informal about it, okay? So, um thank you for joining me for for week sixteen and join us next week, join us tomorrow, join us next week for week six seventeen and we will see you then, uh again.

Dr. Brent Laartz

You can join us on our podcast on gonpro.com, that's G-O-U-N-P-R-O dot com. You can join us on YouTube, that's the video format is on YouTube. Video format on Spotify. Video format on Apple. There's also audio format on Apple. There is um audio format on everywhere where you can find your podcasts, okay? So again, you can tell whether it's going to be audio or video based on the audio has the purplish maroon artwork and the video has the blue artwork, okay?

Dr. Brent Laartz

So, you'll be able to tell readily whether you're getting video and whether you can actually get video on your phone with it. So, again, thank you for joining me. Um, I love this tea.

Dr. Brent Laartz

And um I hope you've enjoyed following what I'm doing and I hope you've learned something. I've learned from something from all you guys. I follow you guys just as much as you follow me on social media, on Substack. I have my stories on Substack. I have lectures on Substack too, by the way. And lectures on YouTube that I'm going to and and also on kreebayid.com. These lectures are are now free though. Um you have to be a uh subscribe on Substack or you have to subscribe on YouTube which um that'll be available soon.

Dr. Brent Laartz

uh creabaid.com that uh is available also for subscription also. All right, so I digress. We'll see you in week seventeen. Love you guys.

Dr. Brent Laartz

love what you're doing. I love what I'm doing. Can't wait to get to week 17, all the way to week 52. We can't get there fast enough. But the best way to go about this is slow but sure, make one change at a time. It makes it more affordable. You can't go replacing your entire household, your entire wardrobe, your entire kitchen, your entire bathroom, everything all at once. So, we're doing it gradually, okay? So, we'll see you soon. Thanks a lot for joining us, everybody.

Dr. Brent Laartz

Peace out.
